Spiced Garlic Mushroom & Cucumber Breakfast Skillet

Ingredients
- 400 grams cremini mushrooms
- 1 large cucumber
- 4 large eggs
- 4 medium garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon ground coriander
- 0.5 teaspoon red chili flakes
- 2 tablespoons fresh parsley
- 1 tablespoon lemon juice
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- 1. Clean and slice the mushrooms. Peel and dice the cucumber. Mince the garlic.
- 2. Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute.
- 3. Add mushrooms. Sauté until golden and their liquid evaporates, about 7 minutes.
- 4. Sprinkle cumin, smoked paprika, coriander, red chili flakes, salt, and black pepper over mushrooms. Stir and cook 2 minutes.
- 5. Push mushrooms to the side. Crack eggs into the skillet and cook to your preferred doneness (sunny-side up recommended).
- 6. Turn off heat. Scatter diced cucumber over skillet. Drizzle with lemon juice and top with fresh parsley.
- 7. Divide skillet contents among 4 plates. Serve immediately.
