- 8 ounces pasta (penne or fusilli)
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Cook the pasta according to package instructions until al dente, then drain and set aside.
- 3. In a large skillet, sauté the sliced mushrooms in a little olive oil over medium heat until they are soft and browned, about 5-7 minutes.
- 4. In a large mixing bowl, combine the cooked pasta, sautéed mushrooms, chopped spinach, ricotta cheese, half of the mozzarella cheese, and half of the parmesan cheese. Mix well to combine.
