Thai-Style Sweet & Spicy Pork Noodle Stir-Fry
A vibrant Thai-inspired stir-fry with tender pork, egg noodles, pineapple, and vegetables in a tangy, medium-spicy sauce.

Ingredients
- 1 pound Pork fillet
- 12 ounces Egg noodles
- 1 cup Pineapple (chunks, drained if canned)
- 1 cup Carrots (julienned)
- 1 medium Onion (sliced)
- 1 cup Tomato sauce
- 3 tablespoons Soy sauce
- 1 tablespoon Fish sauce (optional)
- 1.5 tablespoons Brown sugar
- 2 cloves Garlic (minced)
- 1 tablespoon Fresh ginger (minced)
- 1 teaspoon Red pepper flakes
- 2 tablespoons Vegetable oil
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
Instructions
- 1. Slice pork fillet thinly against the grain. Season with salt and pepper.
- 2. Cook egg noodles according to package instructions. Drain and set aside.
- 3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Sear pork in batches until just cooked through, about 3 minutes. Remove pork and set aside.
- 4. Add remaining oil to pan. Sauté onions, carrots, garlic, and ginger for 3 minutes until softened.
- 5. Add pineapple and cook for 2 minutes, stirring occasionally.
- 6. Stir in tomato sauce, soy sauce, fish sauce (if using), brown sugar, and red pepper flakes. Simmer 3 minutes.
- 7. Return pork to pan. Add noodles. Toss everything together and cook 2–3 minutes until heated through and coated.
- 8. Taste and adjust seasoning. Serve hot, garnished with extra red pepper flakes if desired.
