Vegetarian Gyros with Tzatziki

- 1 medium zucchini, sliced
- 1 medium bell pepper, sliced
- 1 medium red onion, sliced
- 1 cup cherry tomatoes, halved
- 4 whole pita breads
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon fresh dill, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- 1. In a large bowl, combine the sliced zucchini, bell pepper, red onion, cherry tomatoes, olive oil, salt, and pepper. Toss until the vegetables are evenly coated.
- 2. Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated vegetables and grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
- 3. While the vegetables are grilling, prepare the tzatziki sauce by mixing the Greek yogurt, lemon juice, minced garlic, chopped dill, and a pinch of salt in a bowl. Adjust seasoning to taste.
- 4. Warm the pita breads in a dry skillet or on the grill for a minute on each side until soft and pliable.
- 5. To assemble the gyros, place a generous amount of grilled vegetables in the center of each pita, drizzle with tzatziki sauce, and fold the pita over. Serve immediately.
