Vegetarian Sushi Rolls with Avocado and Cucumber

Ingredients
- 1 cup sushi rice
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 medium ripe avocado
- 1 medium cucumber
- 4 sheets nori
- 2 tablespoons soy sauce
- 1 tablespoon sesame seeds
Instructions
- 1. Rinse the sushi rice under cold water until the water runs clear, then cook it according to package instructions.
- 2. Once the rice is cooked, mix together the rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold it into the warm rice. Allow the rice to cool.
- 3. While the rice cools, peel and thinly slice the cucumber and avocado.
- 4. Lay a sheet of nori on a bamboo sushi mat, shiny side down. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving about an inch at the top edge.
- 5. Arrange slices of avocado and cucumber in a line across the rice about one inch from the bottom edge, then carefully roll the sushi away from you, using the mat to help shape it tightly. Seal the edge with a little water.
