- 1 cup brown lentils
- 1 cup long-grain rice
- 2 medium onions
- 4 cups water
- 1 teaspoon cumin
- 1 teaspoon salt
Instructions
- 1. Rinse the lentils under cold water until the water runs clear, then soak them in water for about 30 minutes (optional, but helps reduce cooking time).
- 2. In a large pot, heat 2 tablespoons of oil over medium heat. Slice the onions thinly and sauté them in the pot until they are caramelized, about 10-15 minutes.
- 3. Once the onions are caramelized, remove half of them and set aside for topping later. To the remaining onions, add the soaked lentils, water, cumin, and salt. Bring to a boil.
- 4. Reduce the heat to low, cover the pot, and simmer for about 15 minutes. Add the rice to the pot and stir gently. Cover and cook for an additional 20 minutes or until both the rice and lentils are tender.
- 5. Remove from heat and let sit for 5 minutes before fluffing with a fork. Serve warm, topped with the reserved caramelized onions.
