Creamy Spiced Chicken Thighs with Caramelized Onions

Ingredients
- 4 pieces chicken thighs (bone-in, skin-on or boneless)
- 2 medium onion
- 3/4 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley (optional)
Instructions
- 1. Slice onions thinly. Mince garlic. Pat chicken thighs dry and season with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high. Brown chicken thighs on both sides (about 3 minutes per side). Remove and set aside.
- 3. Add onions to skillet. Sauté until golden and caramelized, about 8 minutes, stirring often.
- 4. Add garlic, paprika, cumin, and cayenne. Cook 1 minute until fragrant.
- 5. Return chicken to skillet. Pour in cream. Reduce heat to low, cover, and simmer 10 minutes or until chicken is cooked through.
- 6. Taste and adjust salt or cayenne for spice. Garnish with parsley before serving.
