Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 cup frozen mixed vegetables
Instructions
- 1. Set the Instant Pot to 'Sauté' mode, add olive oil, and let it heat up.
- 2. Season the chicken breasts with garlic powder, onion powder, and dried thyme, then add them to the pot. Sauté for about 5 minutes on each side until browned.
- 3. Remove the chicken and set aside. Add the rice to the pot, stirring to coat it in the remaining oil and seasoning.
- 4. Pour in the chicken broth and scrape any browned bits from the bottom of the pot. Place the chicken back on top of the rice.
- 5. Close the lid, set the valve to sealing, and cook on 'Manual' high pressure for 10 minutes. Once finished, allow a natural pressure release for 5 minutes before quick releasing any remaining pressure.
- 6. Stir in the frozen mixed vegetables, fluff the rice, and let it sit for a few minutes before portioning into meal prep containers.
