Lentil Dal with Basmati Rice

- 1 cup red lentils
- 1 cup basmati rice
- 1 tablespoon cooking oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt
- 1 cup fresh cilantro, chopped
Instructions
- 1. Rinse the red lentils under cold water until the water runs clear, then set aside.
- 2. In a large saucepan, heat the cooking oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- 3. Stir in the minced garlic, grated ginger, turmeric, cumin seeds, and coriander powder. Cook for an additional 2 minutes until fragrant.
