- 2 cups brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced bell pepper
- 1 cup diced chicken breast or tofu
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 tablespoons fresh cilantro, chopped
- 1 lime juiced
Instructions
- 1. In a medium saucepan, combine the brown rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 40-45 minutes or until rice is tender.
- 2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced chicken or tofu, and season with cumin and chili powder. Cook until the protein is cooked through and browned, about 6-8 minutes.
