Ingredients
- 1 medium cauliflower, chopped into florets
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup quinoa, uncooked
- 2 cups vegetable broth
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. In a large bowl, toss the cauliflower florets and chickpeas with olive oil, cumin, paprika, salt, and pepper until well coated.
- 3. Spread the cauliflower and chickpea mixture on a baking sheet and roast in the oven for 20 minutes, or until golden brown and tender.
- 4. While the vegetables roast, rinse the quinoa under cold water, then combine with vegetable broth in a saucepan. Bring to a boil, then reduce to a simmer and cover for about 15 minutes, or until the quinoa is fluffy and the broth is absorbed.
- 5. Once everything is cooked, assemble the bowls by placing a scoop of quinoa at the base, topped with roasted cauliflower and chickpeas. Store in airtight containers in the fridge for up to 5 days.
