- 1 cup green or brown lentils
- 1 cup basmati rice
- 4 large yellow onions
- 3 tablespoons olive oil
- 1 teaspoon ground cumin

Instructions
- 1. Rinse the lentils under cold water until the water runs clear. In a medium pot, combine the lentils with 3 cups of water and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until tender.
- 2. While the lentils are cooking, rinse the basmati rice under cold water until the water runs clear. In a separate pot, add the rinsed rice along with 2 cups of water and a pinch of salt. Bring to a boil, then lower the heat, cover, and simmer for about 15 minutes.
- 3. As the rice and lentils are cooking, slice the onions thinly. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally until they are deeply caramelized, about 15-20 minutes.
- 4. Once the lentils are cooked, drain any excess water and add them to the skillet with the caramelized onions. Stir in the cooked rice, ground cumin, and adjust seasoning with salt as needed. Cook together for an additional 5 minutes over low heat.
- 5. Serve warm, garnished with extra caramelized onions on top. Enjoy your Mujaddara as a standalone meal or with a side of yogurt or salad.
