Vegetarian Bibimbap with Gochujang

Ingredients
- 2 cups cooked white or brown rice
- 1 cup spinach, blanched
- 1 cup carrots, julienned
- 1 cup zucchini, julienned
- 1 cup shiitake mushrooms, sliced
- 2 large eggs
- 3 tablespoons gochujang
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds
Instructions
- 1. In a large skillet, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 3-4 minutes until they are tender.
- 2. Add the julienned carrots and zucchini to the skillet and stir-fry for another 3-4 minutes until the vegetables are cooked but still crisp.
- 3. In a separate pot, bring water to a boil and gently add the eggs. Boil for about 6-7 minutes for soft-boiled eggs, then transfer them to an ice bath to cool.
- 4. To assemble the bibimbap, place a serving of rice in a bowl and arrange the sautéed vegetables and blanched spinach on top in an aesthetically pleasing manner.
- 5. Slice the soft-boiled eggs in half and place them on top of the vegetables. Drizzle with gochujang and soy sauce, and sprinkle with sesame seeds before serving.
