Vegetarian Masala Rice Pilaf

Ingredients
- 1.5 cups Basmati rice
- 1 medium, diced Onion
- 3 cloves, minced Garlic
- 2 medium, diced Tomatoes
- 2 small, diced Potatoes
- 8 ounces, sliced Mushrooms
- 1 large, diced Bell peppers
- 2 tablespoons Vegetable oil
- 1 teaspoon Cumin seeds
- 1 teaspoon Ground coriander
- 0.5 teaspoon Turmeric powder
- 1 teaspoon Garam masala
- 0.5 teaspoon Red chili powder
- 1.25 teaspoons Salt
- 2.75 cups Water
- 0.25 cup, chopped Fresh cilantro (optional)
Instructions
- 1. Rinse rice in cold water until clear. Soak for 15 minutes, then drain.
- 2. Heat oil in a large pot over medium heat. Add cumin seeds; fry until fragrant (30 seconds).
- 3. Add onions. Sauté until soft and golden, 5 minutes. Stir in garlic; cook 1 minute.
- 4. Add potatoes. Cook 3 minutes, stirring occasionally. Add mushrooms and bell peppers; cook 3 more minutes.
- 5. Add tomatoes, coriander, turmeric, garam masala, chili powder, and salt. Cook until tomatoes soften, 4 minutes.
- 6. Add drained rice. Stir gently to coat with spices. Pour in water; bring to a boil.
- 7. Reduce heat to low. Cover and simmer 15 minutes, until rice is tender and liquid absorbed.
- 8. Remove from heat. Let rest, covered, 5 minutes. Fluff with fork. Garnish with cilantro if desired.
