- 2 cups sweet potatoes, cubed
- 1 can chickpeas, drained and rinsed
- 1 can coconut milk
- 1 cup vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup spinach, fresh
Instructions
- 1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
